This week, Oliwia is sharing two of her go-to recipes — styled to perfection in our new Lunch Set. From a hearty winter salad to wholesome brownie bites, each dish is made for busy days, slow lunches, or anything in between.
Lunch Set Smoke, Lunch Set Dune
WILD RICE WINTER SALAD
This salad is a symphony of roasted veg, wild rice, and rotisserie chicken — finished with pops of pomegranate and a zippy mustard-honey dressing. It’s nourishing, satisfying, and made for prepping ahead.
Ingredients
100g wild rice
1–2 sweet potatoes, peeled and cubed
A handful of Brussels sprouts, thinly sliced
1/2 red onion, thinly sliced
Shredded rotisserie chicken
Pomegranate arils (for topping)
Dressing
1/4 cup olive oil
1/4 cup Dijon mustard
Squeeze of lemon
2 tbsp honey
Salt and pepper to taste
Method
Cook the wild rice according to packet instructions.
Roast sweet potato cubes in a 200°C oven for 10 minutes. Add Brussels sprouts and onion, then roast for a further 15 minutes or until golden and tender.
Combine everything in a bowl, drizzle with dressing, and toss to coat.
Serve warm or cold- either way, it’s a winner.
BROWNIE BITES
Your daily sweet treat fix, minus the fuss.
These bites are fudgy, naturally sweetened, and rich in all the right ways. Perfect for lunchboxes, afternoon cravings, or sharing with friends (if you must).
Ingredients
1 cup almond meal
1 tbsp cocoa powder
1/4 cup date syrup
1/4 cup coconut oil
100g dark chocolate, for coating
Method
Mix almond meal, cocoa, date syrup, and coconut oil until well combined.
Roll into balls and freeze until firm.
Melt the dark chocolate and dip each ball to coat.
Store in the fridge and enjoy as needed (which might be often).
