
Kerby Dichiera's Game Day Sliders

INGREDIENTS
Sliders
10 mini brioche buns
500g Harvey Beef mince
1 tbsp breadcrumbs
½ tsp paprika
½ tsp garlic powder
½ tsp salt
Toppings
10 slices cheese
2 heads baby gem lettuce, washed and sliced
Onion, pickled or fried
10 pickled cornichons
Burger Sauce
2 tbsp American mustard
2 tbsp tomato sauce
2 tbsp whole egg mayonnaise
METHOD
To make the burger patties, combine the mince, breadcrumbs, paprika, garlic powder and salt, giving everything a quick mix to bind the mince and evenly distribute the seasonings. Divide the mixture into 10 portions and press each one down to create a smash patty. Make the patties slightly wider than the buns, as they’ll shrink a little while cooking.
To make the burger sauce, combine the mustard, tomato sauce and mayonnaise in a small bowl and mix until smooth.
Drizzle the patties with olive oil and season with an extra pinch of salt. Heat a griddle pan or BBQ grill and cook the patties for 2 minutes, then flip. Top the cooked side with cheese and continue cooking for 1 minute. Transfer the patties to a plate, then lightly toast the brioche buns in the same pan.
To assemble, spoon the burger sauce onto the buns. Place a patty onto each burger bottom, top with lettuce and onion and finish with the burger lid. Skewer a cornichon onto the top of each slider and serve.
