Spicy Marry Me Chicken Pasta

Serves 4

This one-pot wonder is everything we crave during the cooler months - warming, bold and effortlessly delicious. The chorizo adds smokiness, the sun-dried tomatoes bring sweetness, and the creamy finish makes it an instant crowd-pleaser. Trust us, this recipe lives up to its name.

Ingredients

650g boneless, skinless chicken breast (about 4 breasts), cut into bite-sized pieces

1 chorizo, diced

1 tbsp olive oil

1 onion, finely chopped

3 garlic cloves, peeled and crushed

170g sun-dried tomatoes, drained and finely chopped

1 tsp oregano

2 tsp paprika

250g dried pasta

650ml chicken stock

150ml double cream

50g parmesan, grated

Freshly ground black pepper

Salt to taste

A handful of spinach

Method

In a large, deep frying pan, heat the olive oil over medium heat. Add chicken and season generously with pepper. Cook for 5 minutes, stirring occasionally, until golden on all sides.

Lower the heat and add chorizo, garlic, onion, sun-dried tomatoes, oregano and paprika. Cook for 3–5 minutes, stirring regularly, until the onion softens.

Add pasta and chicken stock. Stir well and cover. Let it simmer for 15–20 minutes, stirring occasionally, until the pasta is cooked and most of the liquid has been absorbed.

Turn the heat to low. Stir in the spinach and cream and cook for another 1–3 minutes until the spinach wilts and everything is heated through.

Check that the chicken is cooked through. Season to taste.

Remove from heat, stir in parmesan and serve immediately.

Overnight Coffee Oats

Serves 2

Ingredients

1 cup rolled oats (blended to flour)

2 tbsp chia seeds

1½ cups milk of choice

1 espresso shot

Sweetener to taste

Method

Combine blended oats and chia seeds in a bowl or container.

Add milk, espresso and sweetener, stirring well to combine.

Cover and chill in the fridge overnight.

Serve chilled or at room temperature the next morning. Add a dollop of Greek yoghurt, a few cacao nibs or a drizzle of almond butter if you’re feeling fancy.
