Spring always has us craving the outdoors - and what better excuse than a picnic feast? Liv has created two crowd-pleasing recipes that are fresh, light and flavour-packed: Cauliflower Muffins and a Potato Gem Salad.

Perfect for sharing (and snacking straight from the bowl), these morsels are guaranteed to earn you compliments at your next park picnic.

Ingredients:

350g cauliflower florets

2 1/4 cups self-raising flour

1 cup milk

2 eggs

1/2 cup olive oil

1 1/4 cups grated cheddar

2 green onions, finely sliced

2 tsp ground smoked paprika

 

Instructions 


1. Preheat oven to 200C or 180C fan-forced. Line a 12 hole 1/3 cup capacity muffin pan with cafe style paper cases.

2. Using a food processor, process, using the pulse function, half the cauliflower until finely chopped. Set aside and repeat with remaining cauliflower.

3. Whisk the flour and nutmeg in a large bowl. Whisk the milk, eggs and oil in a jug. Season. Pour over flour mixture and stir until just combined (do not over mix). 

4. Add cauliflower, 1 cup cheese and onion and stir to combine. Spoon batter into prepared paper cases. Sprinkle with remaining cheese and paprika. Bake for 25-30 minutes or until golden and a skewer inserted in centre comes out clean. Transfer to a wire rack to cool. Serve warm or at room temperature.

2 cups of potato gems

A handful of Parsley, chopped

1 Cucumber, roughly chopped

1 Red onion, diced

1 Garlic clove, crushed

1 Tsp dijon mustard

1 Tsp wholegrain mustard

1/4 Cup greek yogurt

1/4 Cup kewpie mayo

Salt & Pepper

Juice of 1 lemon

 

Instructions

  1. Heat your oven to 200°C, line a baking tray with baking paper and lay the potato gems in a single layer and place them into the oven for 10 mins.

2. Pull the potato gems out, squish them down and sprinkle some salt over the top and place them back into the oven for a further 10 mins or until crispy.

3. In a large bowl, add all the remaining ingredients and stir to combine.

4. Once the potato gems are nice and crispy, remove them from the oven, allow them to cool slightly and then stir them through the mixture.
